Stabilizers and emulsifiers for mascarpone cheese
Mascarpone is milky-white in color and is easily spread. It is used typically in Italian dishes and most commonly known as a main ingredient in tiramisu.
Industrial mascarpone replaces part of the cream with either butter or vegetable fat, water and emulsifiers in order to reduce costs.
